Vegetable, Nut and Mushroom Loaf

Ingredients

  • 1 tbsp Olive Oil
  • 1 Medium Onion (Finely Chopped)
  • 2 Garlic Cloves (Finely Chopped)
  • Tbsp Fresh Thyme Leaves (Chopped)
  • 1 Tbsp Garam Masala
  • Glug of Sherry or Brandy
  • 300g Mixed Nuts (Roughly Chopped)
  • 50g Pistachios (Chopped)
  • 75g Prunes (Roughly Chopped)
  • 1 Cooking Apple (Finely Chopped)
  • 2 Medium Sized Eggs
  • 175g Chestnut Mushrooms (Finely Chopped)
  • 3 Rosemary Sprigs
  • Salt and Freshly Ground Black Pepper

Method

Preheat oven to 180°C prepare a lined tin and a bain marie for the oven.

Heat the oil on a medium heat in a large pan. Add the chopped onions. Fry these until soft. Add chopped garlic and chopped thyme. Season this with salt and pepper and the garam masala.

Add the chopped mushrooms and cook for a few minutes until they have released their water and reabsorbed it. Then increase the heat and add the alcohol.

Meanwhile, mix all the chopped nuts, pistachios, apple and prunes together and add them to the onions and mushroom mix in the hot pan.

Stir and season, take off the heat and add the eggs and mix thoroughly.

Put the mixture in the lined tin lay the rosemary sprigs on the top and cook in the bain marie in the oven for 1 hour.
